Often the first question we hear is "How often do the blades need to be sharpened or replaced?". Well in 6 years, we have olny had a customer replace the same size blade ONCE. (An employee dropped them on the corner of a table.) Our blades are made of quality stainless steel and are dishwasher safe. Not like others I have seen, with gray, chipped mystery metal I call Chinesesium. That being said, we do offer additional blades in case a customer want to cut different thicknesses. (or drops one on the corner of a table)
Typically 8mm is the ideal blade for Mexical restaurants. Cuts skirt steak into fajitas in 1 cut, while chunks of meat takes 2. Then drop it through 2 more times for taco meat.
If you do not sell fajitas and only want taco meat, then the 5mm is for you. Just drop it through 3 times and your done. (a 4th if you want it finer) However the 5mm is too thin for fajitas.
Want thicker fajitas- we have 10mm blades for you. Although these are usually too thick for taco meat, and most get a 2nd blade for that.
